Description
This BBQ chicken sweet potato bowl is bold, balanced, and satisfying. Smoky shredded chicken meets roasted sweet potatoes, black beans, corn, and creamy avocado for the perfect healthy weeknight dinner.
Ingredients
2 medium sweet potatoes, peeled and cubed
1 tbsp olive oil
Salt and pepper to taste
2 cups cooked, shredded chicken
1/2 cup BBQ sauce
1 cup canned black beans, rinsed and drained
1 cup corn kernels (fresh or frozen)
1 avocado, sliced
1/4 cup chopped red onion
Fresh cilantro (for garnish)
Lime wedges (optional)
Instructions
1. Preheat oven to 400°F (200°C). Toss sweet potato cubes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes, until tender and slightly crispy.
2. In a bowl, mix shredded chicken with BBQ sauce until fully coated.
3. Warm black beans and corn in a pan or microwave.
4. Assemble bowls: Start with a base of roasted sweet potatoes. Top with BBQ chicken, black beans, corn, sliced avocado, and red onion.
5. Garnish with fresh cilantro and serve with lime wedges if desired.
Notes
Use store-bought rotisserie chicken to save time.
Sweet potatoes and chicken can be prepared 2–3 days in advance.
