Description

This ground beef sweet potato bowl is a healthy, hearty weeknight meal packed with protein, fiber, and bold flavor—ready in 35 minutes.


Ingredients

1 lb ground beef

2 large sweet potatoes, peeled and diced

1 tbsp olive oil

1 tsp paprika

1/2 tsp garlic powder

1/2 tsp onion powder

Salt and pepper to taste

1/2 cup diced red onion

1/2 cup corn (frozen or canned)

1/2 cup black beans, drained and rinsed

1/4 cup chopped fresh cilantro (optional)

1/2 avocado, sliced (optional)

Lime wedges for serving (optional)


Instructions

1. Heat olive oil in a large skillet over medium heat. Add diced sweet potatoes and season with paprika, garlic powder, onion powder, salt, and pepper. Cook until tender and golden, about 10-12 minutes. Remove and set aside.

2. In the same skillet, add ground beef and cook until browned, breaking it up as it cooks. Drain excess fat.

3. Stir in diced red onion, corn, and black beans. Cook for 3-4 more minutes until heated through.

4. Return sweet potatoes to the skillet and toss to combine.

5. Serve in bowls with fresh cilantro, avocado slices, and a squeeze of lime if desired.

Notes

Double the recipe for meal prep.

Store in airtight containers for up to 4 days.

Omit avocado when freezing.
